Eat: Loyal Legion is committed to offering a menu that features plant-based and locally-sourced menu items. Forty percent of the menu will be vegetarian/vegan.
Open: Sunday-Thursday 11:00am- 10:00pm, Friday and Saturday 11:00am- 1:00am.
MEET KURT HUFFMAN, OWNER OF CHEFSTABLE.
Kurt graduated from Wilson High School and is a Portlander, through and through. After earning a master’s degree in law from the University of Glasgow, he moved to Lyon, France, where he and a business partner founded Ninkasi, a brewery and gastropub. Ninkasi had expanded to five locations by the time Kurt left France. He returned to the States where he consulted for cruise lines and got his MBA at UC Berkeley before settling back in his hometown of Portland. Kurt founded ChefStable in 2008, with the mission to open culinary concepts geared toward the vision of individual chefs. ChefStable projects include Loyal Legion, Grassa, Ox, Lardo, and many others.
Loyal Legion will be located in the historic Bank of Beaverton building, which was established in 1930. The arches, red tile roof, stucco walls, and wrought iron grillwork are characteristic of the Spanish Colonial Revival style, which was popular during the era.
Loyal Legion’s remodel will highlight the architectural construction and details of the original building and will be using salvaged materials for the interior, including two hundred year old oak flooring salvaged from the original Rubinstein furniture showroom, formerly located in the basement of the Lloyd Center. Other details will include a tiled bar, tiled walls, oversize leather booths, and a center bar that takes inspiration from the vaulted roof.

“There’s a lot happening here! The old town area of Beaverton is a cool food neighborhood. There are great restaurants here like Afuri, Decarli, Big’s Chicken, Ex Novo, Top Burmese, and many others. Breakside Brewing is opening and they are planning to bring in food pods including Matt’s BBQ, one of the best BBQ spots in the country. It’s becoming a place that invites you to walk around and explore. We’re excited to be part of the energy and growth of downtown Beaverton.” – Kurt Huffman
